  • 1 tablespoon Planta margarine
  • 1/2 cup bell peppers
  • 1/2 cup broccoli
  • 1/2 cup carrots
  • 2 cloves garlic minced
  • 1 inch piece ginger grated
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • Instant noodles cooked
  • 1/4 cup boiling water
  • salt & black pepper
  • spring onions
  1. Heat Planta margarine in a large skillet or wok over medium high heat.
  2. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the vegetables to the skillet, season with salt and pepper and stir-fry until they are crisp tender, about 5-7 minutes.
  4. In a small bowl, whisk together soy sauce and peanut butter until well combined.
  5. Pour the sauce over the vegetables and add the noodles and stir fry for an additional 2-3 minutes until everything is coated and heated through.
  6. Garnish with spring onions.
