Peanut Butter Noodles Stir Fry

- 1 tablespoon Planta margarine
- 1/2 cup bell peppers
- 1/2 cup broccoli
- 1/2 cup carrots
- 2 cloves garlic minced
- 1 inch piece ginger grated
- 3 tablespoons soy sauce
- 2 tablespoons peanut butter
- Instant noodles cooked
- 1/4 cup boiling water
- salt & black pepper
- spring onions
- Heat Planta margarine in a large skillet or wok over medium high heat.
- Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the vegetables to the skillet, season with salt and pepper and stir-fry until they are crisp tender, about 5-7 minutes.
- In a small bowl, whisk together soy sauce and peanut butter until well combined.
- Pour the sauce over the vegetables and add the noodles and stir fry for an additional 2-3 minutes until everything is coated and heated through.
- Garnish with spring onions.
