Curry Laksa

  • 700 grams prawns
  • 200 grams shelled cockles
  • 200 grams soaked cuttlefish
  • 200 grams cooked chicken meat
  • 50 grams fried tow pok (cut into halves)
  • 200 grams beansprouts
  • 500 grams yellow noodles
  • 200 grams soaked vermicelli
  • 2 litres chicken or prawn stock
  • 1 litre coconut milk
  • 100 grams rock sugar (to taste)
  • 2 tablespoons cooking oil
Spice Paste
  • 3 tbsps Planta margarine
  • 100 grams chilli paste
  • 2 tbsps finely minced lemongrass
  • 150 grams shallot
  • 30 grams garlic
  • 3 tbsps coriander seeds
  • 15 grams shrimp paste (belacan)
  • 30 grams dried shrimps (soaked in water)
  • 10 peppercorns
  1. Stir fry prawn heads and shells in a pot till fragrant and add chicken / prawn stock. Boil for 30 minutes and set aside for later use.
  2. Blanch chicken breast, prawns, and cuttlefish in stock until cooked and set aside. Shred chicken breast.
  3. Heat 70g Planta Margarine in a pot to melt. Add and sauté the spice paste till fragrant.
  4. Add half the coconut milk. Continue to sauté until it starts to thicken.
  5. Add in the rest of the coconut milk and chicken stock until it comes to a low boil. Season soup with salt and sugar.
  6. Add in fried tow pok and bring to boil. Set aside on low heat until use.
  7. Blanch yellow noodles, vermicelli and bean sprouts in boiling water. Add to the serving bowl.
  8. Add curry soup stock with pieces of prawns, cuttlefish, shredded chicken and cockles.
  9. Drizzle with chilli oil and garnish with coriander to your preference to serve.
