Baked Plantain with Vegetables

- 5 tablespoons Planta margarine
- 4 plantains chopped into 2 inch cubes
- 1 red bell pepper thinly sliced
- 1 carrot thinly sliced
- salt
- 2 handfuls of spinach chopped
- 1 teaspoon black pepper
- 1/4 cup spring onions chopped
- 1 handful parsley chopped
- Pre-heat the oven to 200 C
- Mix together plantains with melted Planta margarine and salt and layer them onto a baking tray.
- Bake for 15 - 20 minutes.
- In a pan, heat Planta margarine and toss in the red bell peppers, carrots and season with black pepper and add the plantains and let it cook for 3 - 4 minutes.
- Add spring onions and parsley, stir and it's ready to serve.
