Baked Plantain with Vegetables

  • 5 tablespoons Planta margarine
  • 4 plantains chopped into 2 inch cubes
  • 1 red bell pepper thinly sliced
  • 1 carrot thinly sliced
  • salt
  • 2 handfuls of spinach chopped
  • 1 teaspoon black pepper
  • 1/4 cup spring onions chopped
  • 1 handful parsley chopped
  1. Pre-heat the oven to 200 C
  2. Mix together plantains with melted Planta margarine and salt and layer them onto a baking tray.
  3. Bake for 15 - 20 minutes.
  4. In a pan, heat Planta margarine and toss in the red bell peppers, carrots and season with black pepper and add the plantains and let it cook for 3 - 4 minutes.
  5. Add spring onions and parsley, stir and it's ready to serve.
